Quick and Easy Salsa
1/2 small jalapeno chile (or 1/2 chipotle chile), seeded and minced
1/4 small red onion, peeled and root end removed
1 garlic clove, minced or pressed
3 tablespoons fresh, chopped cilantro (coriander)
1/4 teaspoon salt
pinch of ground black pepper
2 teaspoons of lime juice
2 ripe tomatoes, chopped
1/2 cup corn (optional)
Stir all ingredients together in a large bowl. Serve now, or refrigerate for up to three days in a tightly covered container.
Makes: 2 cups. Preparation time: 10 minutes.
