Posh Squash

2 pounds yellow summer squash, sliced
2 eggs
1 cup mayonnaise (you can use lite mayonnaise)
1 small onion, chopped
1/4 cup green pepper, chopped
1 cup grated parmesan cheese
bread crumbs (optional)
salt & pepper to taste
1. Cook squash until tender, but not mushy.
2. Drain well.
3. Beat eggs.
4. Add all ingredients to eggs and gently mix.
5. Pour into baking dish and dot with buttered bread crumbs (optional).
6. Bake at 350 degrees for 30 minutes.
