Brown Sugar Apple Cake

1 egg
½ cup brown sugar
1 cup flour
¾ teaspoon baking soda
¼ teaspoon salt
¼ cup milk
3 tablespoons butter
1 teaspoon cinnamon
1 teaspoon vanilla extract
½ teaspoon allspice
1 large baking apple (Macintosh, Cortland, etc.)

Streusel Topping
½ tablespoon brown sugar
1 tablespoon sugar
2 tablespoons butter – softened
½ teaspoon cinnamon

  1. Preheat oven to 350. Grease an 8×8″ glass pan. Combine egg and brown sugar in a large mixing bowl. Beat well. Add flour sifted with baking soda and salt. Blend on low speed until mixed. Add milk, melted butter, cinnamon, vanilla and allspice, mixing into a smooth batter.
  2. Peel and core apple and cut off core. Thinly slice apple pieces. Spoon batter into greased pan, smoothing to the edges with the back of a spoon. Place apples in rows covering the top of the batter.
  3. Sprinkle with streusel topping. Bake for 25 minutes, until springy to the touch. Let cool before cutting. Sprinkle with powdered sugar, if desired.
  4. Streusel Topping: Mix by crumbling with your fingers in a small bowl.
